Kenneth Blacker: Most pancakes mixes contain buttermilk, milk, or eggs, so no pancakes from a mix. But you can very easily make your own pancake batter. You have a couple good recipes posted here already and "Vegan with a Vengeance" by Isa Chandra Moskowitz has some more (along with vegan muffins, scone, waffles, etc.) If you googled "vegan pancakes" you'd probably get enough recipes to keep yourself in pancakes ind! efinitely!
